News18Suran ki sabji Recipe: छत्तीसगढ़ की पारंपरिक रसोई अपने अनोखे स्वाद और पौष्टिक व्यंजनों के लिए जानी जाती है. इन्हीं पारंपरिक पकवानों में जिमी कांदा बड़ी की सब्जी का नाम भी शामिल है, जिसे ग्रामीण इलाकों में आज भी बड़े चाव से बनाया और खाया जाता है. उड़द दाल से तैयार बड़ी और जिमी कांदा के मेल से बनने वाली यह सब्जी स्वाद के साथ सेहत का भी ख्याल रखती है. बिलासपुर की गृहिणी भाग्यवती ने गर्मी के मौसम में कम तेल के साथ इसे बनाने की आसान और पारंपरिक विधि साझा की है. जिमी कांदा की बड़ी को सबसे पहले साफ पानी से हल्का धोकर अलग रख लिया जाता है. गर्मी के मौसम में ज्यादा तेल से बचने के लिए बड़ी को हल्का सेंककर या कम तेल में हल्का फ्राई करके इस्तेमाल किया जाता है. कड़ाही में थोड़ा सा तेल गर्म करके उसमें जीरा, हरी मिर्च और मीठे नीम के पत्तों का तड़का लगाया जाता है. इसके बाद बारीक कटा लहसुन और प्याज डालकर हल्का सुनहरा होने तक भुना जाता है. फिर स्वादानुसार नमक, हल्दी, थोड़ा धनिया पाउडर और हल्की लाल मिर्च डालकर मसाले को अच्छी तरह पकाया जाता है. मसाला तैयार होने के बाद उसमें जिमी कांदा बड़ी डालकर 2–3 मिनट तक अच्छे से मिक्स किया जाता है ताकि मसाले का स्वाद बड़ी में अच्छी तरह समा जाए.
