झारखंड के जंगलों में गर्मियों के मौसम में मिलने वाला कुसुम फल स्वाद और पोषण के लिए खास पहचान रखता है. खट्टा, मीठा और हल्का तीखा स्वाद लिए यह फल ग्रामीण इलाकों में काफी पसंद किया जाता है. कुसुम फल का सबसे ज्यादा उपयोग इसकी स्वादिष्ट चटनी बनाने में किया जाता है. इसके लिए सबसे पहले फलों को अच्छी तरह धोकर उनका गूदा अलग कर लिया जाता है. फिर इसमें स्वादानुसार नमक, चीनी और मिर्च मिलाई जाती है। इसके बाद मिश्रण को अच्छी तरह मिलाने पर चटपटी कुसुम चटनी तैयार हो जाती है. इस चटनी में खट्टा, मीठा और तीखा स्वाद एक साथ मिलता है, जो इसे बेहद खास बनाता है.
